Method

Method

Ingredients
- 4 aubergines
- 4 tbsp olive oil
- 2 onions, thinly sliced
- 4 garlic cloves, sliced
- 1 green pepper, diced
- 400 g fresh tomatoes, chopped

Method
- Heat oven to 200°C / 180°C fan. Halve the aubergines lengthways, score the flesh, brush with half the oil and roast cut-side up for 25 minutes until soft.
- Meanwhile soften onions in the remaining oil for 15 minutes. Add garlic and pepper for 3 minutes, then tomatoes and sugar for 8 minutes. Stir in parsley.
- Press down the aubergine flesh to make a hollow in each half and pile in the filling. Put them in an oven dish and pour the water and lemon juice around them.
- Cover with foil and bake for 20 minutes. Let cool for 15 minutes and serve warm or at room temperature; bread is optional.

Choosing your ingredients
Buy meat and poultry certified halal by a supplier you trust. Check stocks, spice mixes, sauces, pastry, bread, cheese and flavourings. Choose cheese made with suitable vegetarian rennet and alcohol-free vanilla. Vegetarian and vegan filters describe the ingredients listed; check the products you buy. Allergen notes are a guide and cannot cover every brand or cross-contact risk.
Cooking and keeping food
Wash hands and keep raw meat and its utensils separate. Cook poultry, mince and skewered meat thoroughly: 75°C for 30 seconds in the centre is one suitable temperature and time combination. Clean the probe after use. Fish should be opaque and flake throughout. Follow packet instructions for frozen ingredients; thaw meat in the fridge.
Cool leftovers and refrigerate within 2 hours; eat within 48 hours. For cooked rice, cool as quickly as possible, ideally within 1 hour, refrigerate and use within 24 hours. Reheat only once, until steaming hot throughout. Follow any shorter storage instruction in the recipe or on the packaging.
